Abstract

POLICANI, Matías et al. Liquid medium inhibition assay with microplates of lactic acid bacteria isolated from raw milk and Paraguay cheese against Listeria monocytogenes. Rep. cient. FACEN [online]. 2024, vol.15, n.1, pp.50-56. ISSN 2222-145X.  https://doi.org/10.18004/rcfacen.2024.15.1.050.

Lactic acid bacteria (LAB) are generally regarded as safe microorganisms with great potential for biopreservation. As biopreservative agents, LAB can be applied as viable cultures for the production of antimicrobial compounds or exploiting chemical agents. LAB are known for the production of a variety of antagonistic compounds, among them bacteriocins, and their antimicrobial potential is defined by the combined action of metabolites on non-desired bacteria. This work evaluates the antimicrobial activity of 7 strains of LAB isolated from raw milk and Paraguay cheese: Enterococcus faecium (M6A y M6B), Lactobacillus fermentum (M16A y M17A), Lactobacillus rhamnosus (M17B) and Lactobacillus plantarum (M18 y M21) against E. coli , S. aureus and L. monocytogenes .

Keywords : LAB; dairy; biopreservation; antimicrobials; bacteriocins; pathogens.
