Abstract

ABSTRACT. The objective of the present investigation was to evaluate the effect of land transport on the bovine carcass in the north of Paraguay. Three distances were evaluated, <100 km (n= 227), 100-200 km (n= 180) and>200 km (n= 245), totalizing 652 animals. Traumatic lesions with ruptures of blood vessels, with accumulation of blood and serum, without cutaneous discontinuity were considered bruises, once the region of the hematomas was detected, they were removed and weighed. The data of live weight, carcass performance, animal category with or without injury, number of bruises, total, local and weight of the carcass injuries based on the distances traveled were subjected to the Analysis of Variance (ANOVA). There is a relationship between bruises and distances traveled from the hacienda to the steakhouse, more at a greater distance. The cow category has incidence of bruises on the carcass. Distance> 200 km presents greater number of animals with lesions (p <0.05), greater weight of tissues removed (p <0.05) in relation to other distances. The posterior region of the carcass presents a greater quantity of tissues removed by bruising, 7,6; 11.5 and 16.9 kg of >100 km, 100-200 in >200 km respectively. Distance of bovine transport to the slaughterhouse has influence on the amount of bruises in the carcasses affecting mainly nobler regions and of greater economic importance.
