Abstract

ABSTRACT. Enzymes are considered food additives and their use is effective in animals. Information on the use of enzymes in food industry-wide in Paraguay is scarce, so this study revealed the types and uses of enzymes in food industry in our country for which interviews were conducted with 11 importers of enzymes according to the matrix of importing of the Ministry of Industry and Trade (2011) in order to detect what are the enzymes of greater import and which industries could use them. As a result, it was observed that 50% of the market of sale of enzymes was the sector of the food industry and that 61% of this market was the sale of enzymes for processing industry of animal feed to be selling the Phytases and Alpha-amylases. The generated information can encourage the development and/or production of enzymes to apply them to this food sector because of that in our country the enzymes used are imported which increases the cost of production
