ABSTRACT
In the food industry, hygiene is a key condition to ensure food safety. That is why this work aimed to describe the visual, microbiological and bioluminescence methods used by food industries to verify sanitation procedures. The methodology was based on the review of the literature in the databases of Google Scholar, Scielo, Latindex, Dialnet, Redalyc and in food regulatory entities. The results showed that the food industries use the different cleaning and disinfection verification methods, either separately or jointly, to achieve compliance with the standards established by the reference regulations. In conclusion, the method used to verify the sanitation procedure resulted from the size of the company, the nature of the food, the processes applied and a series of factors that define the very identity of the industry, to guarantee quality. and food safety.
